Most inventory systems answer one question well: how many units of this SKU do we have? For a lot of retail, that's enough. For wine and spirits, it usually isn't — because "47 bottles of Reserve Merlot" hides everything that actually matters: which batch each one came from, which branch it's sitting in, whether it's the bottle a customer is disputing, and whether it left through a sale or through a gap in the count.

SKU-level counts are an average. Serial-level tracking is a record.

The questions a SKU count can't answer

"Is this the bottle the customer is asking about?"

A customer returns with a complaint about a specific bottle — cork taint, wrong vintage, a damaged label. Without a serial, "we sold you a Reserve Merlot" is the most specific thing you can say. With a serial number scanned at the point of sale, you can pull the exact invoice, the exact goods-received batch it came in on, and the exact supplier delivery it was part of — in seconds, not by digging through paper.

"Which batch needs to come off the shelf?"

A supplier issues a recall, or you discover a batch was stored wrong before it reached you. If your stock is tracked only at the SKU level, "pull the Reserve Merlot" means pulling everything, including bottles from batches that were never affected. Serial and batch tracking together let you pull exactly what's implicated and leave the rest on the shelf.

"Did this bottle actually sell, or did it just disappear?"

This is the question that matters most for shrinkage. A SKU count tells you 3 bottles are missing this month. It can't tell you whether those 3 bottles were sold under a different line item, broken and never logged, or walked out the door. A serial that's neither marked sold against an invoice nor logged against an adjustment is a very specific, very findable gap — not a vague variance to write off.

"Which branch is this bottle actually in?"

For any shop running more than one location, SKU counts get murkier the moment stock moves between branches. A serial tied to a specific unit, updated the moment it's transferred, means "where is this bottle" always has one true answer — not a total split across locations that may or may not be accurate depending on when the last count happened.

A SKU count tells you what you have. A serial tells you what happened to it.
